Most traditional confectionery relies on sucrose, a simple sugar with a high glycaemic index of 65. The Science of the “Slow Burn”
Through our partnership with Intelligent Sugar Expert Dr Johannes Coy, discoverer of the TKTL1 gene, we use a specific selection of functional, naturally derived sugars that metabolise differently. These aren’t artificial sweeteners or chemical substitutes. They are intelligently chosen carbohydrates with a sophisticated metabolic profile and a lower glycaemic index than conventional sucrose.
- Isomaltulose: Derived from sugar beets, with a glycaemic index of 32 compared to sucrose at 65. It carries authorised EU and UK health claims confirming it produces a lower blood glucose rise compared to sugar-containing foods.
- Mannose: A naturally occurring sugar found in fruits including cranberries and apples. It has a very low glycaemic index and is absorbed by the body differently to conventional glucose.
- Tagatose: One of the lowest GI naturally derived sugars available, with a GI of just 3 compared to sucrose at 65. It carries authorised EU and UK health claims confirming it produces a lower blood glucose rise compared to sugar-containing foods, and contributes to the maintenance of tooth mineralisation.
- Galactose: A naturally occurring sugar found in milk and fermented dairy, with a glycaemic index of 20, some 70% lower than conventional sucrose. Galactose is metabolised via the Leloir pathway, a distinct metabolic route from glucose, which is the scientific basis for its lower glycaemic response.
- Trehalose: A naturally occurring disaccharide found in mushrooms, plants, and yeast, with a glycaemic index of 38, significantly lower than conventional sucrose at 65. Trehalose contributes to the texture and mouthfeel of RELEEESE products and utilises a different metabolic pathway to conventional sucrose.
Why the “Sugar-Free” Label Doesn’t Fit
