About Dr Coy
Everything we make is built on the science behind the natural sugar blends developed through Dr Johannes Coy’s research. Dr Johannes Coy is a German molecular biologist. Thirty years of research, more than seventy published scientific papers, and one question running through all of it: how do cells process sugar?
In 1995 he found a gene called TKTL1, which plays a significant role in how cells metabolise glucose. Nobody thought much of it. The genetic databases logged the gene as defective, because pieces of it appeared to be missing, and the conclusion drawn was that it required no further attention.
Dr Coy wasn’t convinced. What looks like a fault, he reasoned, can also be an advance. So he kept working on it.
Three decades later, that gene is studied by research groups around the world, including at the Max Planck Institute.
That same work led him to sugar itself. He spent years identifying naturally derived sugars with a substantially lower glycaemic index than conventional sucrose. Rare sugars, found in small quantities in fruit, vegetables and dairy, that behave differently to the sugar in everything else.
His work showed that not all sugars behave the same, and that naturally derived sugars with a lower glycaemic index can deliver real sweetness in a completely different way. That work became the foundation of Intelligent Sugar®.
